Its late August and the garden has been in business! Were up to our eyeballs with our favorite Zucchinis & Cucumbers! The Tomatoes are finally ripening and keeping us on our toes with storing for later uses.
Today we made a Third Menu that combines the ingredients we’ve been using in a variety of ways over the past couple weeks; Zucchini & Nut Cheeses! Flavonoid-Phytonutrient Rich Lemons and Heart Healthy Olive Oil.
Straight from the garden came a medium sized zucchini, I sliced planks carefully with my mandolin (and my glove) and placed them in our House Dressing Recipe which consists of approximately 2/3 cup extra virgin olive oil with cumin & coriander, salt & pepper crushed, minced garlic & Italian seasonings. This house dressing is the base of everything I make and have on hand pretty much every day.
Today the Zucchini planks got soaked in that House Dressing and layered into a glass pan. Over the top of the marinated zucchini I laid down a nice thick layer of spinach then thick fresh picked tomatoes and added a dollop of this delightful Cashew Cheese made with Cashews (obviously) blended up in the food processor with either roasted Red Peppers or diced tomatoes or artichoke hearts Mmm- along with a 1/4 cup of our House Dressing and 1 Tbs Nutritional Yeast to give it that extra nutritional boost and cheesy flavor yum!
I added another layer Rich Layer on top with sauteed thick sliced Mushrooms (Medicinal Mushrooms) are WONDERFUL and Nutritious! on top of the mushrooms layered hemp seed hearts, grilled onions & Fresh Basil.
Another Layer of a Delightful Marinara that was as simple as blended tomatoes, Onions, Garlic Basil and Italian herbs. then another layer of marinated zucchini planks, Cashew Cheese and Mushrooms oh my so Good.
Participants enjoyed the meal and were inspired to make their own version at home.
